You will find similar recipes all over the interweb for making something which resembles the following Kitchari recipe.
Ingredients
- 1 cup white basmati rice
- 1/2 cup split mung beans (yellow or green)
- 1/2 inch fresh ginger root
- 1 tsp ghee
- Small handful coriander or cilantro leaves
- 1/4 t turmeric
- 1/4 t coriander powder
- 1/4 t cumin powder
- 1/4 t cumin seeds
- 1/4 t mustard seeds
- 1/4 t salt
- Pinch of hing
- 7 cups water
Method
- Wash rice and shall together until water runs clear
- Add 7 cups water to the shall and rice and cook covered until it softens
- Saute the mustard seeds, whole cumin seeds, hing, cumin powder, coriander powder and turmeric together with ghee in a separate saucepan and cook for a few minutes
- stir sauteed spices into rice and dhal and continue cooking until done
- add salt and coriander/cilantro leaves before serving
