Kitchari Recipe

You will find similar recipes all over the interweb for making something which resembles the following Kitchari recipe.


  • 1 cup white basmati rice
  • 1/2 cup split mung beans (yellow or green)
  • 1/2 inch fresh ginger root
  • 1 tsp ghee
  • Small handful coriander or cilantro leaves
  • 1/4 t turmeric
  • 1/4 t coriander powder
  • 1/4 t cumin powder
  • 1/4 t cumin seeds
  • 1/4 t mustard seeds
  • 1/4 t salt
  • Pinch of hing
  • 7 cups water


  • Wash rice and shall together until water runs clear
  • Add 7 cups water to the shall and rice and cook covered until it softens
  • Saute the mustard seeds, whole cumin seeds, hing, cumin powder, coriander powder and turmeric together with ghee in a separate saucepan and cook for a few minutes
  • stir sauteed spices into rice and dhal and continue cooking until done
  • add salt and coriander/cilantro leaves before serving

makes 4 servings
