A modified version of the more traditional Kitchari recipe, which uses brown rice & lentils instead of dhal and basmati rice.
Ingredients
- 1 cup brown rice & lentils mix [about 2/3 rice to 1/3 brown lentils]
- 1/2 inch fresh ginger root
- 1 tsp ghee or butter
- Small handful coriander or cilantro leaves
- salt to taste
- 2 1/2 cups water
Kitchari Spice Mix
I usually mic up a large batch and keep it in a sealed glass container for ease of use.
- 1/4 t tumeric
- 1/4 t coriander powder
- 1/4 t cumin powder
- 1/4 t cumin seeds
- 1/4 t mustard seeds
- Pinch of hing

Method
- Saute the Kitchari Spice Mix together with ghee or butter in your usual rice pot and cook for a few minutes
- Add brown rice & lentils mix to pot
- Add salt to taste
- Add water and leave lid uncovered till mix boils
- Turn heat down, cover pot and cook covered until it softens
- Add coriander/cilantro leaves before serving
makes 2 servings I usually add things like roughly chopped tomato, feta, etc to flesh out the rice
